Jaggery and Berry Cake

Method:
  • Pre Heat the oven to 170 degree C for 10 minutes.
  • Grease the desired tin. In a bowl sift whole wheat flour/oat flour, Baking powder, Baking soda, cinnamon powder.
  • In a mixing bowl, whisk the yogurt and jaggery for few minutes until jaggery dissolves completely.
  • Add Oil and vanilla essence– combine it well.
  • Now add in –the dry ingredients by cut and fold method and add milk and combine everything together.
  • In the end add in Almonds, Cashews, sunflower seeds, fresh blueberries.
  • Bake it for 25 to 30 minutes.
  • Jaggery and Berry cake is ready

Basbousa (Semolina) Cake

Method:
  • Pre Heat the oven 170 degree C for 10 minutes.
  • In a mixing bowl, Add semolina, castor sugar, desiccated coconut and oil mix them together.
  • Then gradually add milk and rest the batter for 5 to 7 minutes.
  • Now add baking powder and vanilla essence in the batter and mix it well.
  • Grease the tin, dust some semolina and pour the batter add some extra desiccated coconuts and chopped almonds on top.
  • Bake it for 20 to 25 minutes.
  • Make the Saffron Syrup: In a saucepan add water, sugar and saffron give it a single boil.
  • Pour this saffron syrup on hot cake and enjoy.

Yogurt Mango Popsicles

Method:
  • Whisk yogurt, Mango Pulp, Honey and vanilla essence.
  • Now layer the Ice cream mould with yogurt mixture and some chopped mangoes, Granola and repeat the process according to the mould you are using.
  • Set it overnight in freezer
Note:
  • Take out the extra water from the yogurt (use thick yogurt)
  • Adjust the sweetness of honey as per your taste.
  • Layer the mould as per your choice.
  • Enjoy Yogurt Mango Popsicles

Oats Chocolate Brownie

  • In a mixing bowl, whisk the yogurt and sugar for few minutes until sugar dissolves completely.
  • Add Oil and vanilla essence combine it well.
  • Now add in the dry ingredients by cut and fold method and add milk and combine everything together.
  • In the end add in Chopped walnuts and chocolate chips.
  • Bake it for 25 to 30 minutes.
  • Your Oats Chocolate Brownie is ready
