Rice Pan cakes with Coconut Chutney

Method:
Method to make Rice Pan cake-
- Soak Rice for 1 hour
- Grind them
- Once rice is finely ground, add one boiled potato and grind them again
Now add: - Chopped Carrot, Capsicum,Tomatoes,Beans,Onions,Green chilli,Ginger Coriander leaves,Curry leaves,Curd
- Give it a good mix
- Add Cumin Powder, Salt ,Red Chilli powder, Garam Masala (India Spices) Half teaspoon ENO powder
- After putting ENO powder-add 1-2 spoon of water in the mixture
- (You can also add half teaspoon of baking powder instead of Eno if required)
- Firstly, grease the pan and heat it Put the batter in the pan
- Leave it covered on a slow flame for 2-3 minutes
- Now check it once Once ready, now put some oil on the top
- Flip it to the other side
- Check the Pancake from the other side
- Our super delicious Rice pancake is ready
Method to make Coconut Chutney-
- Take Roasted Chana (Gram) dal (Lentil)
- Add desiccated Coconut (or fresh coconut if available)
- Add Coriander Leaves, Ginger, Green leaves, Curd, salt to taste
- If it looks thicker then you can add some chilled water
Episode 2 - Breakfast Series
Breadless Sandwich with Plum Chutney

Method:
- Soak Semolina (Granulated Wheat) for half an hour in water so that it swells properly
- Add Chickpea flour
- Add 1/4th teaspoon of Sugar, Half teaspoon Himalayan pink salt 1 teaspoon Oil, 1 teaspoon Chilli Flakes, 1 cup Curd
- Give it a good mix
- If your curd is thick then you can add some water
- Add 1 teaspoon of ENO and put 1-2 spoons of water and mix well
- Keep this batter covered for 5 minutes
Filling:
- Take a bowl and put Sweetcorn
- Add finely chopped tomatoes, Onions,Cottage Cheese,Green Chili and three types of Bell pepper (You can add any Bell Pepper available to you)
- Add-Pizza Cheese,1 teaspoon salt,Oregano,Chili Flakes
- Mlx them properly
- Pre-heat the toaster first and then grease it
- Spread the batter with a spoon
- Do not fill it too much because we need to add filling on the top and then again need to add the batter So, just put one layer of batter
- When it gets cooked a bit then add the filling inside (You can also add Paneer Bhurjee (Scrambled Cottage Cheese) or Vegetable filling)
- Again, put the batter Grease the other side of the toaster
- Now check that if it is cooked from one side
- If yes, cook from the other side also
- Breadless Sandwich is ready
Plum chutney:
- Take three medium-size Plums
- Plum should neither be too raw nor too ripe
- This is to keep its sour-sweet taste
- Now, peel these plums
- Cut into pieces and remove the seed
- Take a mixer jar and add plums,Ginger,Green Chili, Some Mint leaves,Coriander leaves Salt, 2-3 spoon chilled water Instant plum chutney is ready
- If your plums are sour in taste then you can add one teaspoon of sugar
- If they are sweet then squeeze half lemon

Soya Rostie

Method:
Method to make Soya Rostie –
- Soak Soya Chunks in hot water for half an hour and allow them to swell
- Squeeze these chunks well using your hands
- Now, coarsly grind these Soya Chunks in the mixer and do not let them become a fine paste
- Add Gram Flour, Curd, Chopped Onion, Tomato, Ginger, Green Chilli, Sesame Seeds Himalayan Pink Salt, Red Chilli Powder and Turmeric Powder
- Give a good mix with hands
- Take a non-stick pan and grease the pan with little oil
- Now make a ball using your hands and spread it by placing it on the pan
- Make a hole in the centre so that it cooks well from all sides
- Put some oil in the middle of it
- Keep it covered for 2-3 minutes
- Once it is ready, flip it and keep it covered again for 2-3 minutes and let it cook well from the other side also Healthy, protein-rich, gluten-free
- Soya Roastie is ready
Method to make curd to go with the Rostie –
- Take the curd and beat it well
- Add chopped Onions, Coriander Leaves, Green Chilli, Curry Leaves, Some Salt, Roasted Cumin Powder and Red chili Powder
- It is very simple but it tastes delicious with Roastie
Episode 4 - Breakfast Series
Pancakes with Peanut Chutney

Method:
- First, take a Pan and put one and a half cups of water
- Add Moong dhuli dal (Split and Skinned Moong Lentil) (soaked this earlier for half an hour)
- Add raw peanuts (not Roasted) Put 2 red chilis 3 green chilis
- Add one whole tomato (cut the tomato a little bit, this will peel easily (however leave the whole tomato as it is)
- Now Cook this mixture
- While this is cooing, Take soaked Rice and grind to make a fine paste
- Add boiled potato (By adding Boiled Potato, the rice mixes very well)
- Transfer this rice mixer to a separate bowl
- Now check that the dal mixture (Lentil) is cooked
- Take out whole tomato, peal it and put it back in the dal (Lentil) mixture
- Now put it in a separate container
- While it is cooling, let’s make made peanut chutney
- Add One cup Peanut, Ginger,Green Chili,Lemon juice and Salt
- Add 2-3 tablespoons of water
- Let’s check our Lentil (Dal) mixture
- Once cooled, then mix it in Rice batter
- Give it a good mix
- Add grated carrot,Chopped Onions,Coriander leaves and Salt
- Now mix it well
- Add 1 teaspoon of ENO powder and then put 1 tsp of water
- You can make it on any non-stick pan
- Once Pan is a hot, grease the pan
- Put 1 Spoon of batter and cover it for 2-3 minutes
- Pan Cakes are ready to eat

Savoury Waffles

Method:
For making Savoury Waffles the first ingredient we need is –
- Split Moong Dal- soak it for 3-4 hours and grind it
- Add Garlic and make a paste
- Transfer the mixer to a bowl
- Add boiled crushed corns
- Add boiled and crushed peas
- Give it a good mix
- Add green chilies, Spring Onions, Coriander Leaves
- Add everything and mix it well
- Add Salt, Black Pepper
- Mix it well
- Check the batter; it should not be too thick or too thin
- Put one spoon of ENO fruit salt
- After pouring ENO fruit salt, pour a spoon of water on it
- Grease our Waffle
- Maker with butter or ghee (clarified butter) as per your choice
- Put the batter in it
- Super Delicious Healthy Waffles are ready
By the time the waffle is ready, Let’s prepare a dip to eat with it
- Method to Make Dip-
- Take 2 tablespoons hung curd
- Put a spoon of green chutney and mix it well
- Simple & healthy dip is also ready

Hummus Sandwich

Method:
- Take lightly roasted White Sesame Seeds
- Add boiled Chickpea (White Chana), 6-7 Garlic Cloves Olive Oil,Salt,Cumin Powder
- Make a paste with all the above ingredients
- Add water if needed and grind it (use chilled water or 2-3 ice cubes only)
- Transfer the paste to a separate bowl
- Put lemon juice
- Mix it well
- Add boiled Corns,Tomatoes,Green Bell peppers,Onions
- You can add any vegetables of your choice
- Add green chilies, Some Salt, Black Pepper
- Mix all these ingredients very well
- Take multigrain bread
- Applying Plum chutney on top of it (I have already shared its recipe in one of my earlier videos)
- Apply a little bit of this chutney and if you do not have Plum chutney then you can also use a little bit of Sauce
- Apply this spread on the Sandwich slice
- Cover its top with another Slice
- Put a little butter on it
- You can also roast it on the griddle or grill them in a sandwich maker
- Apply butter on the other side also
- Our crispy, healthy sandwiches are ready
Episode 7 - Breakfast Series
Pesto and Grilled Vegetable Sandwich

Method:
- Take Zucchini, Red, Yellow & Green Bell Peppers for Grilled vegetables
- You can take any vegetable of your choice
- Now pour some salt on these
- Take a pan and heat it
- Add one spoon of olive oil
- Now put vegetables
- Grill these vegetables well using Multigrain Olive bread (made by Prerna Mehra – you can see her details above)
- This is made by my daughter Prerna Mehra who is a very good Pastry Chef
- Apply pesto sauce on both the sides Put grilled vegetables on top
- The more colored vegetables we use, the healthier the food will be
- Keep Onions on it,Tomatoes Pour some salt and pepper on it
- Put a cheese slice on another side
- Our very different healthy sandwich is ready
For making spread we need- - Basil Leaves (use sweet Basil Leaves)
- Add Garlic cloves,Pine nuts
- If you do not have pine nuts then you can also add walnuts
- Add Olive Oil,Salt,Black Pepper
- Now, make a fine paste
- Pesto Sauce is now ready

Sesame Pizza

Method:
- Let’s prepare the mixture first
- Take half a cup of boiled Corns,Coriander Leaves,Green Chili, Spring Onions Ginger, Cheese, Capsicums Roasted Sesame Seeds, Mashed Potato, Salt, Pepper, Oregano Chili Flakes
- Give it a good mix
- You can put whatever vegetables you have
- Take wheat Pizza Base
- Put a little pizza spread on top of this base
- Apply batter on the top
- Put Sesame Seeds as well (not roasted Sesame Seeds)
- Put the seeds and press a bit
- Take the pan and one hot, grease it
- Once we put Sesame seeds, turn the side upside down
- Super healthy, crispy Sesame pizza is ready
Method for Chili Garlic Sesame ketchup - Take one spoon of Sesame Oil ,Garlic, Sesame Seeds
- Add Chili Flakes
- Put some water so they don’t burn
- Now, put these in tomato Ketchup
- Chili Garlic Sesame ketchup is ready
